STRENGTH & DURABILITY
Sidewall Gussets: Provide greater strength to the perimeter of the pan.
Structural Ribs: Increase pan strength and allow more pans to be stacked together to help save bakery floor space, although modifications to some pan stacker magnets may be required and they are not available on flat tray-style bun pans.
Flared-End Structural Ribs: Provide the benefits of structural ribs while adding greater strength to the perimeter of the pan, similar to a sidewall gusset.
Interlocked Strap Design: Eliminates seams and crevices on the perimeter of the baking surface to enhance sanitation and tray durability.
MATERIALS & CONSTRUCTION
Pan Material: Choose aluminized steel or aluminum based on your bakery’s production requirements, equipment, and desired pan performance.
High-Strength Steel Band Material: Available in 1/4-inch round or 1/2-, 5/8-, 11/16- and 7/8-inch band sizes.
Seaming Strips: Lock moulds together when they cannot be manufactured seamlessly in one large panel.
HANDLING & SYSTEM INTEGRATION
Seamless Corners: Available in 1-, 2- or 3-inch configurations to reduce pan diagonal measurement and help ease transfer through the bakery system.
BAKING PERFORMANCE
Heat Circulation Holes: Allow more even heat distribution and provide water drainage.
Embossed Holes: Allow gases to escape from the mould, with one or five holes typically used in mould bottoms.
Convex Mould Bottoms: Help minimize cupping and produce a flatter bun bottom while helping center the dough piece in the mould.
Quilted Mould Bottoms: Improve heat dissipation, simulate an artisan-baked bun bottom, and add strength to the bottom of the mould.
